In 1998, Chef Roberto Treviño reshaped Puerto Rico’s culinary identity. With the launch of Dragonfly in Old San Juan, he introduced a groundbreaking fusion of Latin flavors and Asian technique — setting the stage for a new era of bold, expressive cuisine on the island.
A pioneer in the movement that brought modern Puerto Rican gastronomy to the global stage, Treviño became a cultural reference point. His fearless approach to flavor, design, and dining helped redefine what a restaurant could be — not just a place to eat, but a space to feel.
His influence extended beyond the kitchen. Treviño appeared on Iron Chef America, competing against Mario Batali, and was a finalist on The Next Iron Chef. He’s been featured in The New York Times, Bon Appétit, and Condé Nast Traveler, and has represented Puerto Rico at international food festivals and James Beard events.
